Sweet Potato Pie

Here’s another recipe for everyone.  This one isn’t necessarily for bento, although a nice thin slice of pie will fit nicely into a bento box.

I went to the farmer’s market today and this fellow was selling sweet potatoes. These weren’t just ordinary sweet potatoes.  No, these were MONSTER potatoes.  One of them was as big as my shoe.  (I wear 6 1/2W).  These things were huge!  I bought several pounds and brought them home wondering how to use them all up before they went bad.

I decided to use the biggest ones to make a pie.  The four largest made two HUGE pies.  These pies are spilling over with Sweet Potato goodness.  And oh is it good.  I don’t like sweet potatoes and I love this pie.

Get your sweat potatoes washed, chopped up into chunks and then boil the living tar out of them.  Once their soft when you stick them with a fork the skins should literally peal right off.
2 cups mashed sweet potato fills one 9in pie.  I filled mine way deeper and it was still good.

So get one 9in pie shell (make it buy it, whichever, I have a great recipe for pie shells, if you let me know, I’ll send it to you). I drizzled mine with a little bit of garlic oil.
Preheat your oven to 425 degrees
Mix your mashed sweet potatoes with:
2 beaten eggs
1 1/4 cups milk (I used plain soy milk)
3/4 cup sugar (I left out the sugar completely since sweet potatoes are sweet enough on their own.)
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
2 Tablespoons rum
4 Tablespoons melted butter

Mix those all together really well and then pour into your pie shell.  Bake for 10 min, then reduce the heat to 300 and bake for another 50 minutes or until the filling is firm.

Like I said, I ended up with two pies.  I’m going to hopefully give one to my mother-in-law.  I’d totally try this one, if I were you.  So tasty!

Ginger Pork & Sesame Spinach

Here’s another bento recipe for anyone who cares.  The taste tests indicate that this one is a big hit.  It’s very, very simple.

This one is straight out of Bento Boxes by Naomi Kijima which I got for my birthday.  It’s a good book.  It’s  very short but it has some very nice full sized pictures.  Not all the recipes are viable for me and some I’ll probably never do but overall I really like it.

This recipe I had to double for two servings since it calls for 4oz of pork and the pork I bought was just about 8oz. (Four oz equaled one boneless pork chop).  The recipe I’m putting down is for one serving.
Ginger Pork
4oz pork (sliced thin)
1 Tablespoon soy sauce
1 teaspoon fresh grated ginger
Combine the soy sauce and the ginger then add the pork and let sit.  I let mine sit overnight, I’d saw two to four hours is good.

Cook the pork with some oil over high heat. (About 2-3 minutes on each side.)

Sesame Spinach
4oz spinach
1 Tablespoon crushed black sesame speeds (I didn’t have these so I used one scant teaspoon of sesame oil and it worked great!)
1/2 Tablespoon soy sauce
1 Teaspoon sugar
Blanch the spinach and drain, chop if necessary (I used baby spinach, no chopping needed)
Combine the remaining ingredients and toss with the spinach.


Ginger Pork & Seasme Spinach

Pack the whole thing in a bento with the pork over a bed of rice and there you have it.  I think apart from the marinating (which took 10 minutes the previous day) it took about 20 minutes all told to cook and put together.The piece I tasted was fantastic I can’t wait to eat this tomorrow.

Wet Basement

So this morning we hear this noise like water rushing and we’re both like: “Buh?”
Eventually J gets up to investigate and we discover that our basement is flooding.

One of the hoses that goes to the washing machine burst and water was spraying out at high speed.  I shut off the water and we spent the next couple of hours sweeping water into the drain.

The basement is still damp and I’ve got a call into my fix it guy to come and replace the hoses.

So standing in cold water on a cool day has brought our colds rushing back to join in the misery.  Oh boy.

Cranky, annoyed, wet turtle. :(

Can I like totally turn in my grownup card and go play video games all day or something?

Still Sick

Took the day off work Friday.  I try never to take time off work because no work = no pay but I was too sick to get out of bed so no work for me.  I spent all of Thursday and Friday in bed and today I had to make someone else take charge of the potluck I was planning.

I don’t feel as tired but I still kinda feel like crap.  It’d better go away before Monday.

Something in the air
